<p>Cantitate: 6-8 portii</p>
<p>Pregatire: 30 minute</p>
<p>La rece: 3 ore</p>
<p>Aveti nevoie de:</p>
<ul>
<li>piscoturi de sapmanie (aproape un pachet dublu, 300-400 g)</li>
<li>4 oua</li>
<li>4 linguri de zahar</li>
<li>250 g crema mascarpone</li>
<li>o ceasca mare de  cafea tare</li>
<li>2 linguri cacao</li>
</ul>
<p>Pentru crema, bateti albusurile spuma. Frecati galbenusurile cu zaharul pana obtineti o spuma, si apoi adaugati branza mascarpone. Amestecati galbenururile cu branza pana obtineti o crema fina, aerata. Adaugati albusurile batute spuma peste galbenusuri si branza, si amestecati usor.</p>

<p>Intr-un vas, adaugati straturi alternative de piscoturi inmuiate in cafea, si crema. Pentru a putea manevra mai usor prajitura, puteti adauga o folie de plastic in vas inainte de a aseza straturile, de care va puteti folosi mai apoi pentru a scoate prajitura din tava.</p>
<p>Treceti piscoturile rapid prin cafea, deoarece absorb mult lichid, si in cateva minute se vor inmuia prea tare. Veti avea impresia ca nu sunt destul de inmuiate, dar ele se inmoaie in cateva minute.</p>
<p>Terminati cu un strat de crema, si apoi dati la frigider pentru 3 ore cel putin. Inainte de servire, pudrati cu cacao din belsug (va puteti folosi de o sita pentru a repartiza uniform cacaoa).</p>
<p>Noi nu ne-am putut abtine si am mancat-o chiar atunci <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> , si precum se vede, crema nu avea inca textura potrivita pe care ar obtine-o dupa cateva ore la rece. Dar a fost excelenta.</p>

<p style="text-align:left;">Bateti ouale intregi cu zaharul, si spre final adaugati uleiul. Bateti bine, si adaugati coaja de lamaie si faina amestecata cu praful de copt. Va rezulta un amestec de consistenta smantanii. Daca e nevoie, puteti sa mai adaugati putina faina sau putin lapte, pentru a ajusta consistenta. (Eu de obicei il fac &#8220;la ochi&#8221;&#8230; pun din fiecare ingredient pana rezulta consistenta pe care o doresc).</p>
<p style="text-align:left;">Turnati amestecul intr-o tava de tort ori tarta tapetata cu hartie de copt ori folie de aluminiu, si peste adaugati fructele taiate cubulete.</p>
<p style="text-align:left;">Serviti-o cu lapte condensat, frisca batuta, ori crema de valinie. Este densa, aromata, umeda si delicioasa.</p>

<p>Aveti nevoie de:</p>
<ul>
<li>200 g fructe confiate taiate cuburi marunte (daca nu aveti sau nu va incanta, puteti sa le inocuiti cu succes cu 2 pere mici coapte si aromate; eu am adaugat si cativa fulgi de migdale)</li>
<li>300 g faina</li>
<li>3 lingurite praf de copt</li>
<li>1 lingurita scortisoara</li>
<li>1/2 lingurita nucsoara proaspat maxinata</li>
<li>125 zahar pudra</li>
<li>50 g unt</li>
<li>3 linguri de ulei (de masline)</li>
<li>3 oua</li>
<li>150 g iaurt natural, slab</li>
<li>optional cativa fulge de migdale pentru ornat</li>
</ul>

<p>Amestecati faina cu condimentele, zaharul si praful de copt. In alt vas, bateti untul, uleiul si ouale, iar la final adaugati amestecul de faina. Adaugati fructele confiate sau perele.</p>
<p>Incingeti cuptorul la 200ºC.  Puneti amestecul in 12 forme pentru briose (preferabil de silicon, sau tapetate cu hartie, pentru ca altfel, chinul de a curata formele te poate convinge sa nu mai faci Niciodata briose. Prima oara mi-a luat vreo 2 zile sa curat formele pe care doar le unsesem cu ulei si faina&#8230;) . Nu umpleti formele decat 2/3, pentru ca ele vor creste mult si vor depasi forma. Puteti presara cativa fulgi de migdale sau putin zahar pudra pentru ornat.</p>

<p>Scoateti-le cand incep sa se rumeneasca, si serviti-le calde cu o cafea cu lapte. Si a doua zi sunt excelente.</p>

<p>Am vazut reteta asta in cartea lui Jamie, si cum aveam un peste de pregatit, am zis ca e numai buna. A fost exact cum mi-a promis: rapida, usoara, surprinzator de gustoasa, si speciala.</p>
<p>Cantitate: 2 portii</p>
<p>Timp pregatire: 10 minute</p>
<p>Timp coacere: 15-20 minute</p>
<p>Aveti nevoie de:</p>
<ul>
<li>1 peste intreg, curatat, de 400 g</li>
<li>1 kg sare grunjoasa</li>
<li>1 lamaie</li>
<li>ierburi aromate: cimbru, marar, foaie de dafin, patrunjel</li>
</ul>
<p>Curatati pestele bine, si umpleti-l cu felii de lamaie si cat mai multe ierburi. Pe cat posibil umpleti cavitatea interioara a pestelui, pentru a nu permite sarii ce il va acoperi sa patrunda inauntru. Asezati jumatate din cantitatea de sare pe o folie de aluminiu, puneti pestele peste sare, si cu cealalta jumatate de sare acoperiti  in totalitate pestele. Stropiti cu putina apa sarea, pentru ca atunci cand se va usca sa formeze o crusta.</p>

<p>Dati la cuptorul incins in prealabil la 250ºC pentru 15 minute. Scoateti-l din cuptor, si lasati-l sa se mai coaca odata scos inca 5-10 minute. Crusta de sare va fi suficient de incinsa pentru a continua coacerea lent, la o temperatura scazuta.</p>
<p>Inlaturati crusta de sare cu grija, ca sa nu strapungeti pielea pestelui. Serviti fierbinte, cu cartofi copti, ori legume la aburi. E extrem de aromat, bine patruns, fraged, suculent. Minunat!</p>

Excelent si acela cu o varza murata, insa asta e cu totul altceva.</p>
<p>Reteta nu am gasit-o nicaieri, dar am refacut-o dupa ce am gustat-o.</p>
<p>Timp preparare: 5 minute</p>
<p>Timp gatire: 20-25 minute</p>

<li>2 linguri porumb</li>
<li>6 masline negre fara samburi taiaie rondele</li>
<li>1-2 linguri de ardei rosu, verde, galben taiate cuburi marunte</li>
<li>1 ardei iute tocat marunt</li>
<li>2-3 linguri orez / persoana</li>
<li>2-3 linguri ulei (de masline)</li>
</ul>

<p>Incepeti prin a fierbe orezul in multa apa cu sare. Fierbeti-l pana e suficient de moale incat sa il puteti manca, si nici un minut mai mult. Boabele nu trebuie sa fie zdrobite sau lipicioase. Scurgeti-l bine folosind o sita.</p>
<p>Prajiti in ulei afumatura, si apoi adaugati legumele si prajiti-le  2 minute la foc mare<strong>. </strong>Nu trebuie decat sa se inmoaie putin si sa imprumite uleiului gustul. Adaugati orezul fiert si scurs, care intre timp s-a uscat (fiind fierbinte, apa se evapora usor). Orezul va absoarbi tot sosul din tigaie, va primi gustul afumaturii si a legumelor, si se va praji usor. Lasati-l sa se prajeasca cu legumele 2-3 minute.</p>
<p>Serviti orezul cu bucatele de piept de pui rumenite in putin ulei, si o mana de ciuperci gatite innabusit in unt si usturoi.</p>
<p>E diferit fata de alte retete de orez pe care le-am incercat, surprinzator si delicios.</p>

<p>Pentru decorare:</p>
<ul>
<li>25 g fulgi de migdale</li>
<li>2 cirese din compot sau confiate</li>
<li>zahar pudra</li>

<p>Amestecati toate ingredientele in robotul de bucatarie sau intr-un bol, cu mana sau cu lingura de lemn, pana obtineti un aluat legat (prajiturile formate preponderent din faina si unt nu trebuie framantate deloc, pentru a nu activa glutenul din faina. Prin evitarea framantarii si printr-o amestecare cu miscari cat mai putine mentineti fursecurile fragede si sfaramicioase).</p>
<p>Incalziti cuptorul la foc mediu, cam 160 ºC.</p>
<p>Intindeti o foaie de 1 cm grosime pe masa presarata cu faina, si taiati discuri cu diametrul de 6 cm (eu am folosit o forma mai mica, asa ca am obtinut mai multe prajiturele mai micute). Reintindeti o foaie din resturile obtinute, si continuati operatiunea pana cand terminati aluatul.</p>

<p>Asezati fursecurile intr-o tava neunsa, faceti niste dungi cu furculita, presarati zahar pudra si ornati cu fulgi de migdale aranjati ca petalele unei flori, si cu bucatele mici de cirese ca centrul florii (eu am sarit peste cirese, pentru ca nu aveam).</p>
<p>Coaceti-le pana devin usor aurii, cam 15 minute.</p>

<p>Aveti nevoie de:</p>
<ul>
<li>3 albusuri</li>
<li>150 g de zahar</li>
<li>50 g fistic (sau migdale, nuci, alune nesarate, orice altceva aveti la dispozitie) curatat si tocat marunt</li>
<li>150 g ciocolata amaruie rupta bucati</li>
<li>150 g frisca (preferabil din lapte de vaca, nu vegetala)</li>
</ul>
<p>Incalziti cuptorul la foc mic (cam 110 ºC).</p>
<p>Bateti albusurile spuma si adaugati spre sfarsit zaharul, treptat. Continuati sa bateti pana cand obtineti o spuma densa, cremoasa. Adaugati fisticul / nucile / alunele taiate marunt (nu macinate, ar fi prea fin maruntite), si amestecati usor de jos in sus.</p>
<p>Pe doua tavi acoperite cu hartie antiaderenta asezati mici gramajoare cu o lingurita. Daca folositi un cornet de patiserie, e mult rapid. Dati bezelele la cuptor pana se usuca si se desprind usor de pe tava (cam 40 de minute).</p>
<p>Intre timp, topiti ciocolata amaruie pe aburi sau la microunde. Inmuiati baza fiecarei bezele in ciocolata, si lasati-o sa se raceasca, asezand-o pe o parte.</p>
<p>Bateti frisca si uniti cate doua bezele cu o lingurita de frisca.</p>
<p>Bezeaua e pufoasa, uscata si dulce, ciocolata e crocanta si usor amaruie, iar frisca le echilibreaza prin textura cremoasa si  neindulcita. Sunt absolut minunate. Chiar daca pare mult de lucru cu ele, treaba merge repede, ca sa zic asa <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> , nu e nimic complicat, si efectul final merita, va garantez.</p>
<p>Dupa ce le adaugati frisca, trebuie consumate in aceeasi zi, pentru ca se moaie usor si frisca isi mai pierde din textura (daca  nu e vegetala). Altfel, neumplute, pe puteti tine 2-3 zile.</p>

<p>O reteta cat se poate de  simpla, destul de sanatoasa si foarte gustoasa. Puteti sa o gatiti atat la cuptorul traditional, cat si la cuptorul cu microunde folosind functia grill (e mult mai rapid, si cam la fel de gustos).</p>
<p>Aveti nevoie de :</p>
<ul>
<li>2-3 cartofi mici / medii de persoana</li>
<li>1-2 cepe mici / medii de persoana</li>
<li>1-2 linguri de unt si 1-2 linguri de ulei de masline, in functie de cat de grasa va place mancarea, cate legume gatiti, si cu ce o serviti</li>
<li>sare, piper negru macinat</li>
<li>optional rozmarin, cimbru, sau alte ierburi</li>
</ul>
<p>Va sfatuiesc sa alegeti ceapa rosie cu o culoare mai deschisa, spre roz, si care sa fie moale la pipait (atentie insa, sa nu fie stricata, si acesta sa fie motivul &#8220;moliciunii&#8221;!). Va fi mai putin iute si mai dulce.</p>
<p>Curatati cartofii si ceapa, taiati-i in sferturi, si puneti-i intr-o tava de yena sau de ceramica care poate merge la cuptor, impreuna cu sarea, piperul, untul si uleiul. Amestecati bine, ca legumele sa fie bine acoperite de grasime. Introduceti tava in cuptorul incalzit la temperatura mare (preferabil incalzit si sus si jos, ca sa se poata rumeni frumos legumele), sau la cuptorul cu microunde cu functia grill pornita.</p>
<p>Dupa 2-3 minute, cand untul s-a topit, amestecati din nou legumele. Tineti-le la cuptor pana ceapa se topeste partial si se caramelizeaza, si cartofii devin aurii. Intre timp, amestecati din cand cand, pentru ca legumele sa se acopere cu sosul de unt si ulei din tava.</p>
<p>Eu am adaugat peste ei niste piept de pui condimentat, uns cu putin ulei de masline si apoi tavalit prin pesmet si malai, ca sa nu mai fac langa ei o alta friptura. E simplu, rapid, si foarte bun.</p>
<p>Serviti-i fierbinti, cu friptura de porc sau pui, salata sau muratiri. Sunt surprinzatori.</p>

Imi place sa fac portii mici din fursecuri diverse, ca pana maine sau cel tarziu poimaine sa nu mai fie, si sa pot face altele <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> . Plus ca, daca faceti mai putine, timpul de preparare si de coacere e de multe ori mai redus.</p>

<p>Ingrediente:</p>
<ul>
<li>100 g unt la temperatura camerei</li>
<li>50 g zahar pudra</li>
<li>2 galbenusuri de ou</li>
<li>1/2 lingurita esenta de valinie</li>
<li>125 faina</li>
<li>1/2 lingurita praf de copt</li>
<li>25 g malai</li>
<li>10 bucati de capsuni / zmeura congelate (sau gem de capsuni / zmeura / gutui /piersici, orice fructe puternic aromate)</li>
<li>1 lingura de supa de compot de zmeura / capsuni (daca ati folosit fructe congelate. Daca ati folosit gem, nu este nevoie)</li>
<li>zahar pudra pentru ornat (optional)</li>
</ul>
<p>Frecati untul moale cu zaharul, adaugati pe rand galbenusurile si vanilia, si la sfarsit faina de grau, de porumb, si praful de copt. Cu o punga de patiserie formati mici rozete in cateva forme pentru briose, si in mijloc asezati fructele ori gemul. Dati la cuptorul incalzit pe treapta medie, pana devin aurii. Puteti sa le pudrati cu zahar dupa ce se racesc putin.</p>
<p>Sunt moi datorita untului si putin crocante datorita maluiul, iar gemul devin elastic si parfumat, ca un jeleu. Sunt ca niste jucarii mici si aromate.</p>

Eu am pus asa:</p>
<ul>
<li>1 conopida mica</li>
<li>2 morcovi</li>
<li>2 verze mici</li>
<li>5 cepe mari</li>
<li>1-2 ardei gras rosu mare</li>
<li>1 castravete mare</li>
<li>ardei iute (in functie de cat de iuti si de mari sunt, si in functie de cat de iute vreti sa fie muratura)</li>
<li>sare</li>
<li>otet pentru muraturi</li>
</ul>
<p>Se spala legumele, se curata si se taie fiecare. Morcovii si castravetele in rondele subtiri, conopida se desface in buchetele, ardeii se taie cuburi (cam de 1.5-2 cm), ceapa si varza cuburi cam ca ardeii, ardeii iuti ineluse subtiri.</p>
<p>Se amesteca legumele cu sare (dupa &#8220;ochi&#8221; si gust, depinde de cantitatea de legume) si se lasa de seara pana dimineata sa se inmoaie. Se pun legumele in borcane, si peste ele se toarna otet pana sunt acoperite in totalitate. Eu am pus otet indoit cu apa (o parte otet, o parte apa), pentru ca mi se pare prea acra muratura numai cu otet.</p>

<p>Se poate servi cam in 1-2 saptamani de cand a fost pusa.</p>
<p>Este foarte foarte buna. Cam urat mirositoare datorita verzei si cepei <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> , insa minunata.</p>
